Abstract

Food poisoning and foodborne illnesses remain significant public health
challenges in Indonesia, often caused by sub-optimal sanitation. Vocational
culinary school students, as future food handlers, play a vital role in ensuring
food safety. This study aimed to determine the relationship between
knowledge, attitudes, and supervision with hygiene behavior among 10th
grade culinary students at SMK Negeri 4 Jambi City in 2026. This was a
quantitative study using a cross-sectional approach. The study population
consisted of 142 10th-grade culinary students, from which a sample size of
105 respondents was selected using proportionate random sampling. Data
were collected using structured questionnaires and analyzed using univariate
analysis and bivariate Chi-Square tests (α = 0.05). Univariate analysis showed
that 56.2% of students demonstrated good hygiene behavior, 65.7%
possessed good knowledge, 58.1% held positive attitudes, and 88.6%
reported good supervision. Bivariate analysis revealed a significant relationship
between knowledge and hygiene behavior (p = 0.003; PR = 1.846) and a
significant relationship between attitude and hygiene behavior (p = 0.001; PR
= 1.939). Conversely, no significant relationship was found between
supervision and student hygiene behavior (p = 0.090; PR = 1.774).
Knowledge and attitudes are significantly associated with the hygiene behavior
of vocational culinary students, whereas supervision does not show a
significant association. Educational institutions should focus on strengthening
students' intrinsic motivation and cognitive understanding of basic food safety
to consistently improve personal hygiene practices.
